Ventresca tuna | Bonito del Norte
Ventresca is the tuna belly, the best part of the fish. As well as being delicious, Zallo’s tuna is eco-friendly: the fish are caught in the Bay of Biscay using sustainable fishing practices. Silken and delicately textured, it melts in the mouth. You don’t need to do too much with ventresca because it is packed with flavour. On bread with slices of ripe tomato and a drizzle of olive oil is a good way to go.
