Bonito del Norte tuna in olive oil


Pole-and-line tuna tinned in the Basque Country using family recipes. Olasagasti works with its tuna fresh, which enhances the flavour. It is prepared with exceptional care, using artisanal methods. Olasagasti even sings to the Albacore - also a long held cannery tradition. Olasagasti’s Bonito del Norte tuna is MSC-certified, and fished in the Bay of Biscay in the summer months when it is leaner and less fatty and in peak condition. It is caught using pole and line, meaning the fish is caught one at a time. This prevents by-catch and damage to the sea bed; the fish’s flesh is not damaged either as it can be when it is netted.
