Cantabrian anchovy paste by Basque cannery Olasagasti. Olasagasti fishes its anchovies in spring, at their peak, in the Cantabrian Sea and begins the close to a year long salt curing process on the day of catch. Garnish pasta dishes with the paste, add to canapés or enjoy spread on toast.
