

Pickled fennel with dill
The fennel is thinly sliced and has a delicate crunch, and comes in a light, sweet and sour marinade with dill.
This pickle is from the Copenhagen-based brand's Høst range. Høst means harvest or autumn. The organic spreads, mayos and pickles in the range are made from the vegetables, berries and herbs that grow in the forests and fields during Denmark's brief, light-filled summers. Harvested before winter and preserved for use through the year, they are ideal as spreads, dips or toppings.
Layer the crunchy pickle on toast, rye bread or crackers with tinned mackerel, tuna, sprats or sardines.
