Sea bass fillets in a traditional salsa verde made from Albariño wine, garlic, onion, parsley and spices. The Albariño is a celebrated one hailing from the Pazo De Rubianes' vineyards in Galicia. The sea bass is meticulously hand prepared at Los Peperetes cannery, south of the vineyards in Pontevedra. The fillets are then lightly cooked to achieve Los Peperetes' signature tenderness and complemented with the traditionally-made broth.
