Razor clams in brine from the Rías Gallegas - the inlets from the Atlantic Ocean that cut into Galicia in northwestern Spain. The waters are calmer and warmer than the sea there, which helps the shellfish thrive. Ramón Peña works with very small batches of razor clams and only the very best make the grade and get into the tins.
