Fish pâtés
The fish spreads are a key part of Portuguese cuisine and complement the country's world-renowned conservas. Serve on crusty bread or crackers as an aperitif at the beginning of a meal and pair with a spritzy Vinho Verde. The Portuguese pâtés are made with the best parts of the fish, and are complemented with only a handful of natural ingredients: olive oil, tomato, herbs. The Portuguese pâtés are smoother and more emulsified than the slow-cooked rillettes from la belle-iloise in France. These have a home-cooked feel, with shreds of fish and other ingredients kept intact rather than blitzed.
