Sprats in tomato sauce
Wild-caught Baltic sprats in a light, refreshing tomato sauce. The sprats or brisling have pristine silver skins and a tender texture. They are canned in Latvia by Diplomats, an artisanal cannery noted for the quality of its tinned sprats, a staple of Latvian cuisine.
Serving suggestion: chill the tin before opening and enjoy gazpacho-style, or in cooler weather warm the tin and add some toasted croutons seasoned with salt and pepper.
