Sea urchin roe
Sea urchin roe in brine. The sea urchins are harvested by divers in Galician waters, the roe then carefully removed by hand in the nearby Ramón Peña cannery. Full of omega-3, micronutrients and protein, sea urchin roe - known as uni in Japanese cuisine - has a delicate and buttery texture, and is great with wasabi and soy sauce or on crackers with a thin slice of cucumber and cracked black pepper.
