Enjoy baby eels or elvers in a sustainable way. These elvers (angulas in Spanish) are made from Surimi, a natural fish paste found in Asian cuisine created from abundant white fish. Angulas are a popular Spanish tapas, especially in the Basque Country. Try these in angulas a la bilbaína — named after Basque city Bilbao (sauté thinly sliced garlic in olive oil, add a chopped chilli pepper and the drained elvers and heat through); or simply scatter them warm or cold over salads.
