About the sprats: The sprats or brisling are wild-caught in the Baltic Sea and smoked and hand-prepared by the artisans at Diplomats, a Latvian cannery noted for the quality of its canned brisling. The flavour and texture of sprats are very similar to sardines. And like sardines they are oily fish that are high in omega 3.
About the cannery: Diplomats is a renowned Latvian tinned fish brand, with a history dating back to 1907. The fish is canned using 100% artisanal methods in its state of the art cannery in the seaside village of Engure, on the shore of the Gulf of Riga. One of Diplomats' signatures is to take a traditional part of Latvian cuisine (such as smoked sprats) and introduce a novel twist inspired by another country's cuisine.
